Description of Lecithin

| Lecithin contains a mixture of phosphatides, including phosphatidyl choline, an important precursor to the main neurotransmitter, acetylcholine. As an emulsifier, lecithin also helps in the absorption and utilization of fat-soluble nutrients, such as vitamins A, D, E and K.
